Duck Breast and Cherry Chutney Recipe

Ingredients
- 1 tablespoon extra-virgin olive oil
- ½ cup chopped onion (1 small)
- 3 garlic cloves, crushed
- 1 tablespoon finely chopped shallot
- ½ teaspoon black pepper
- ½ teaspoon ground cumin
- Scant ¼ teaspoon dried hot red pepper flakes
- ¾ teaspoon sea salt
- ½ cup coarsely chopped red bell pepper (½ medium)
- 1 plum tomato, coarsely chopped
- ¼ cup dry red wine
- 1 ½ to 2 tablespoons cider vinegar
- 2 tablespoons raw honey
- ½ teaspoon mustard (soy free)
- 1 can (3 cups) Bing cherries
- ½ cup Golden Raisins
- 10 (6 oz.) boneless duck breasts with skin
- 2 tablespoons water
- 1 tablespoon chopped fresh tarragon or chives

Method for chutney and glaze:
- Heat oil in a 2 to 3 quart heavy saucepan over moderate heat until hot but not smoking, then cook onion, garlic, and shallot, stirring occasionally, until golden, about 7 minutes. Add tomato paste, black pepper, cumin, hot pepper flakes, and 1/4 teaspoon salt and cook, stirring, 30 seconds. Reduce heat to medium and add bell pepper and cook, stirring occasionally, until softened, about 5 minutes. Stir in wine, vinegar (to taste), and raw honey and simmer approx 5 minutes. Stir in mustard, 1 1/2 cups cherries, and remaining 1/2 teaspoon salt and simmer 1 minute. Allow to cool slightly and reserve all but ¼ cup of the mix to the side. Place1/4 cup mix in a blender and puree until very smooth, about 1 minute (use caution when blending hot liquids). Reserve for glazing duck. To finish the chutney, add the remaining 1 ½ cups of cherries, tarragon, chives and all the golden raisins. Can be prepared one day ahead.

- Put oven rack in middle position and preheat oven to 450°F. Score duck skin in a crosshatch pattern with a small sharp knife and season duck all over with salt and pepper.

- Heat water in an ovenproof 12-inch heavy skillet over low heat until hot, then add duck, skin side down. Cook duck, uncovered, over low heat, without turning, until most of fat is rendered(melted) and skin is golden brown, about 25 minutes.

- Transfer duck to a plate and discard all but 1 tablespoon fat from skillet. Brush duck all over with cherry glaze and return to skillet, skin side up.

- Roast duck in oven until thermometer registers 135°F, about 8 minutes for medium-rare. Remove from oven and allow to rest for 5 minutes.

- Holding a sharp knife at a 45-degree angle, cut duck into slices. Serve with cherry chutney. Garnish with fresh fruits and vegetables.

Ingredients
- 1 sliced tomato
- 1/2 cup flat-leaf parsley leaves
- 1/2 cup basil leaves
- 2 cloves garlic
- 2 tablespoons capers, drained
- 1 anchovy fillet, cut into pieces
- 1 cup extra virgin olive oil
- 2 tablespoons fresh lime juice
- Sea salt, to taste
- Freshly ground pepper, to taste
- 1 1/2 pounds sirloin steak
- 5 cups baby field greens
- 1 sliced avocado optional
Method
- In a food processor, purée parsley, basil, garlic, tomato, capers and anchovy fillet. Slowly add olive oil mixed well.  Add lime juice and pepper  blend until sauce is smooth. Season to taste.  Set sauce aside.
- Season the steak to taste and grill or broil.  Slice beef thinly and cover with salsa verde.
- Optional cover sauce with sliced avocado.
 Serve over greens.

Grilled Prawns

Unshelled seafood recipe. Prawns are tastier unshelled. Grilled Prawn Paleo food marinaded with fresh lemon or lime juice, garlic, red onions and unsaturated olive oil. Delicious quick and easy Paleo Recipe.

Ingredients:
- 1 pound of prawns or large shrimps
- Fresh juice from 4 limes or lemons
- 4 crushed garlic cloves
- 1 small minced red onion
- 2 teaspoon olive oil
- Sea salt to taste
- Black pepper to taste

Prepare Prawns;
- Leave shell and tail devein  prawns.
- Clean prawns and let dry.

Preparing Marinate:
- In small bowl mix lime or lemon juice, olive oil, crushed garlic, minced onion, sea salt and pepper. Mix well.
- Put cleaned deveined prawns in marinade.
- Marinade ingredients for 3-4 hours.
- Grill for appromately 5 minutes both sides of prawns. Grill in olive oil.
- Watch prawn carefully they cook quickly.
-Serve

Paleo Chicken Recipes

 Ingredients

- 1 large lemon
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 (4 - 5 pounds) whole chicken
- 2 cups unsweetened pomegranate juice
- 1 tablespoon Dijon mustard
- 1 teaspoon finely chopped garlic
- 2 tablespoons plus 1 teaspoon arrowroot
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon sea salt 
-  Seeds from 1 pomegranate
- 1 tablespoon honey (optional)
Method
Preheat oven to 375°F. Pierce lemon in several places with a fork and place whole, along with rosemary and thyme in chicken cavity. Tied chicken legs keeps chicken firm.  Place in a roasting pan. Combine juice, mustard, garlic and arrowroot for basting. Pour mixture over chicken, and sprinkle with black pepper and salt.  Bake 25 minutes and baste. Bake another 25 minutes, and baste again. Add pomegranate seeds. Reduce heat to 350°F and bake another hour, basting every 30 minutes. Pour off liquid and reserve skim fat. Let chicken rest 30 minutes with covered aluminum. Serve chicken and top with reserved glaze.

Ingredients
- 2 bunches baby carrots, ends cut off
- 10 small white onions, peeled, cut in half
- 2tbs olive oil
- 3tbs balsamic vinegar
- 2tbs honey
Instructions
- Preheat a fan-forced oven to 180o Celsius/350o Fahrenheit.
- Line a baking tray with baking paper, spread carrots and onions on tray.
- In a small bowl combine olive oil, balsamic vinegar and honey. Drizzle evenly over vegetables and toss to coat.
- Place in oven and bake for 30‐40minutes or until vegetables are tender and golden.

- 4tbs rosemary leaves, chopped
- 4tbs olive oil
Instructions
-  Pre-heat oven to 180 degrees Celsius, fan-forced.
-  Line a baking tray with baking paper. Place pumpkin, onion and rosemary leaves on the baking tray and coat with olive oil.
-  Place tray in the oven and bake for 15-20minutes or until pumpkin has cooked and onions have browned.

Ingredients

1 ½ bunch celery

2 cups water

1  to 2 Tbsp flax or olive oil

Juice of ½ lemon

2 tsp honey or agave syrup

1 clove garlic

1 jalapeno

1 finely chopped red pepper 

½ tsp salt and pepper to taste

Blend well. Add 1 chopped avocado and 1 chopped red pepper. Serve

Nutty Peachy Arugula Spinach Salad

Delicious Paleo Dinner or Paleo Lunch Salad Recipe. Nutritious arugula, spinach, blackberries, peaches, walnuts, bacon and egg. With Paleo Balsamic Dressing Recipe. Yummy!

Ingredients:
- 1 1/2 cups fresh Arugula
- 1 1/2 cups spinach
- 1/2 cup blackberries
- 3/4 cup slice peaches (peaches cut in 1/8)
- 1/2 cup walnuts soaked
- 4 to 6 slices bacon (fried)
- 2 tbsp. virgin coconut oil
- 1 boiled egg
- 1 tsp cinnamon (optional)
- 1 tsp nutmeg (optional)

Preparation:
- Wash arugula, spinach and blackberries set aside to dry.
- Slice walnuts in halves
- Sauté sliced fresh peaches. Sauté in virgin coconut oil until tended and set aside.
- Crumble crisp bacon into bits.
- Shell boiled eggs and finely chop egg.
- Mix arugula, spinach, bacon bits, blackberries, egg bits, walnuts, cinnamon and nutmeg.
- Top salad with sautéed (grilled peaches) and add balsamic dressing of choice.

- Paleo Balsamic Dressing Recipe: In a small bowl combine olive oil, balsamic vinegar and honey. Combine dressing ingredients to taste. Orthodox Paleo diet does not allow honey but honey used in many Paleo Recipes.

-1 tsp nutmeg






Preparation:
- Wash arugula, strawberries and blackberries/cranberries and set aside to dry.
- Cut strawberries in quarter or halves
- Slice walnuts in halves
- Mix arugula, strawberries, blackberries/cranberries, cinnamon and nutmeg
- Top salad with balsamic dressing of choice.

Egg and Capsicum Salad

Ingredients
- 2 boiled eggs, diced
- 2 bacon eyes, diced
- 1tbs oil
- ½ green capsicum, diced
- ¼ cup parsley, chopped
- 1tbs mayonnaise
- 1 cup mixed salad leaves


Instructions
-Place oil and bacon in a frying pan on medium heat and cook until bacon has started to crisp.
-Remove excess oil and place bacon into a mixing bowl along with boiled eggs, capsicum, parsley
and mayonnaise. Combine well.
To serve, place salad leaves on a plate and top with egg and capsicum mixture.

Fresh Fruit Salad
This Paleo fruit salad combines chopped peaches, strawberries, bananas, blueberries or blackberries and red and green grapes, dressed with a simple fresh lime and pineapple juice dressing. Fruits are seasonal in Winter months may substitute peaches and strawberries with grapefruits, cantaloupe, kiwi or oranges. Be creative and add your favorite seeds and nuts. Substitute to taste.

Paleo Recipe Fresh Fruit Salad

Ingredients:
-6 peaches, peeled, pitted and chopped
-1 pound strawberries, rinsed, hulled and sliced
-1/2 pound seedless green grapes
-1/2 pound seedless red grapes
-3 bananas, peeled and sliced
-1/2 pound blackberries or blueberries (to taste)
-small amount of honey (topping to taste)

Dressing:
-juice of one lime
-1/2 cup pineapple juice
-1 teaspoon ground ginger

Preparation:
Combine chopped and sliced fruits in a large serving bowl; toss gently.Add small amount of honey to taste. Whisk together remaining ingredients in a small bowl or 1 cup measure. Pour dressing mixture over fruit and toss gently to combine. Cover and chill the fruit salad thoroughly before serving.
This fruit salad recipe makes enough to serve about 10 to 12 people.

Raw Tabouli Salad

  • 1 bunch cilantro
  • 1 bunch parsley
  • 2 scallions (green onions)
  • ½ pint cherry tomatoes
  • 1 avocado (diced)
  • 1 cup raw almonds (soaked or un-soaked)
  • 1 lemon or lime juiced
  • 1 Tbsp olive oil
  • 1 tsp salt

Preparation
Take cilantro and parsley leaves off of stems and rinse and spin dry. Chop and add green onions, tomatoes and avocado. Food process almonds until fine. Add to vegetables. In small bowl mix lemon juice, oil, salt and agave and pour over vegetables and mix. Paleo Recipe



Paleo Chicken and Shrimp Gumbo
Paleo Chicken and Shrimp Gumbo
Ingredients

 1 white onion finely chopped
1 red onion finely chopped
6 garlic cloves finely chopped
1 cup cut okra
1 tsp basil
1 tsp thyme
1 tsp oregano
1 tsp cayenne pepper
1 tsp ground black pepper (to taste)
1 tsp sea salt (to taste)
1 tbsp natural gumbo seasoning (optional)
3 cups water

Meat
2 lbs chicken wings
1 lb raw large shrimp (shelled and de-veined)
1/2 cup coconut flour or almond flour
1 8 oz can of tomato paste
1/2 cup dried tomatoes
2 tablespoons olive oil, coconut oil or vegetable oil
salt to taste
pepper to taste

Preparing
- Season and flour chicken wings in almond flour and fry in olive, coconut or vegetable oil until tender and golden brown. Remove chicken wings from saucepan and set aside.
- In sauce pan 1 tablespoon of oil heat. Saute white onions, red onions, okra, garlic, basil, thyme, oregano, cayenne pepper, black pepper and salt to taste. Let simmer until approximately 20 minutes.
- Add tomato paste and sun dried tomatoes mix well and add fried chicken wings
- Transfer total mix to large pot and 3 cups water and let simmer for approximately 1 hour.
- Add Raw Shrimp to mix and cook for approximately 15-20 minutes

Cauliflower - Rice Substitute

Paleo Recipes Rice Substitute

 Rice is not allowed in the Paleo Diet. Rice can be eliminated from the diet or a substitute can be cauliflower. Cauliflower is a vegetable closely related to broccoli but its florets tend to be white and are denser and more compact. Cauliflower can be eaten raw or cooked.

Ingredients
- 1 whole fresh cauliflower
- 1 teaspoon sea salt (optional for boiling)

Boiling Preparation:
- Keep refrigerated and unwashed until ready to cook.
- Outer leaves should be removed.
- In core of cauliflower place deep X.
- 3 1/2 quarts of salted boiling water place whole cauliflower stem first.
- Cook for approximately 20 -25 minutes and remove cauliflower.
- Let cauliflower cool.
- Once cauliflower has cooled cut cauliflower to a rice-like consistency.

Ingredients
2/3 cup flax meal
1/3 cup almond meal
1-1.5 tsp baking powder
 2 tsps salt to taste
3 tsp olive oil, almond oil or coconut oil
•1 cup water until mixture is well blended
- Optional can add sage, oregano, cinnamon, natural vanilla and or honey

Directions
1. In mixing bowl, combine dry ingredients. In another bowl, beat eggs together. Mix all ingredients and pour batter into greased loaf pan. The Cook 45 minutes at 350 degrees or until it is cooked all the way through.


Coconut Milk Ice Cream - Paleo Dessert Recipes

Coconut milk is a Paleo friendly milk alternative.  Chunky version dairy-free ice cream, stir in a cup of chopped peaches, mangoes, bananas or strawberries into the coconut mixture before transferring it to the ice cream machine for freezing. Year Around Dairy Free Ice Cream Recipe!


Paleo Dairy Free Ice Cream


-4 egg yolks
-1/2 cup honey
-1 (13.5- ounce) can light coconut milk
-1 (13.5- ounce) can regular coconut milk
-2 teaspoons vanilla extract
Method
In a large bowl, whisk yolks and sugar together until pale yellow, 1 to 2 minutes. Add light and regular coconut milk and whisk again until well combined.
Transfer coconut mixture to a medium pot and cook over medium heat, stirring constantly, until just thickened and mixture coats the back of a spoon, 8 to 10 minutes. Be sure not to let the mixture boil. Remove pot from the heat and stir in vanilla.
Transfer contents of pot to a bowl and chill until cold. Process mixture in an ice cream maker according to manufacturer’s instructions then transfer to a container with a lid and freeze until firm, about 2 hours more.

-6 cups cubed watermelon, seeds and rind removed  (about 4 pounds)

-1 tablespoon freshly squeezed lime juice
        
         -1 tablespoon freshly grated lime zest
Preparation:
-Blend watermelon in a blender, or process through a juicer, until liquefied completely. Stir in lime juice and zest. Pour mixture through a sieve into a bowl, then spoon juice into Popsicle molds with sticks inserted, and freeze.

4 cups Brazil nut milk

1 tsp vanilla

1 tsp ground clove

1 tsp cinnamon powder

1 tsp ground nutmeg

¼ cup honey

2 frozen bananas

 Peel lemon and grate peeling to taste add grated lemon peelings to tea. Additionally, peeled lemon divide in 1/4 and add 1/4 squeeze lemon to tea with grated lemon peels and selected tea.
